Here's something to make you smile, Melissa! My mother has a Ph.d in Marathi, my mother tongue. She always says if she did not have to think about what to cook for dinner, she would have gotten another Ph.D. The struggle is so damn real. And you are bang on correct when you thought "at least it's not takeaway." I deal with this problem by stocking my fridge with advanced ingredients like multi-tasking chutneys (green cilantro one) and condiments like tahini, sambal oelek, chile crisp, tomato sauce.
I put a chicken on a baking tray , cut potatoes round it , put salt on top and cook at 200 degrees for an hour and a half and that is it , but I am really jealous of people who can get takeaways
I can imagine.We do have some places near us, thankfully but not all of them I can eat. I tend to mostly batch cook then I always have some dall or meal I can heat up.
