That first photo of the cauliflower looks outrageously good! Also, I had to chuckle at “vegetable reluctant” - that describes my husband to a T!

Thanks Sophia. :-) I often find people who don't like veggies are the best to taste veggie food. If it gets past their reluctance then you are know you are on to a good thing. Mr C once at a dinner with lots of cabbage in it. Afterwards he said - It can't have cabbage in it because I liked it!

And versatile too. I make roasted red bell pepper sauce with tamarind pulp & dry red chile pepper. It is the perfect sauce for making tortilla rolls stuffed with spinach, strips of roasted red bell pepper & feta cheese. Once these rolls are cut & insides displayed, they look so beautiful, I call them eye candy rolls

ha! what a brilliant story. The roasted cauliflower salad on top looks like perfection! Do you have the recipe for that posted somewhere as well?

Thanks Lolly😍 yes it’s really simple I cut up cauliflower to make steaks but they often crumble and use that. So I put olive oil, salt, pepper sometimes a bit of smoked paprika, some whole covered garlic cloves and mix then lay out on a grease proof paper covered oven tray then cook at 200 fan for about 20 to 28 mins turning once. And that’s it! I then place on top of the sauce and sprinkle some seeds pomegranate and or pumpkin. Let me know how you get on if you try it.
